April Gullo, originally from Sydney, Australia, kicked off her culinary journey at just 14, landing a kitchen hand gig at a local bistro. The high-pressure, fast-paced environment instantly hooked her, especially the sharp banter and camaraderie among chefs.

Leaving school early, April dove into culinary training at TAFE and joined a prominent hospitality group. She thrived in a hectic restaurant where they handled 800-1200 covers a night, growing through the ranks to Sous Chef. Her journey eventually led her to Balcon by Tapavino, where she now reigns as Head Chef.

With 22 years in the industry, April recalls pivotal moments like standing up to aggressive behavior early in her career, a choice that shaped her into a resilient leader today. She advocates for better conditions in kitchens, hoping for regular hours and larger teams to boost morale and efficiency while supporting mental well-being across the board.
