“ Creativity is nothing but a mind set free”

- Torrie T. Asai

Truffle pig art was born many, many years ago as an idea. A teenage art student, with no comprehension of anything tangible had an idea.

Simply, that art could be put on the wall and every time you looked at it, your life would be a little better.

Now,

Life has a way of challenging any plan, an inter-mitten Sat-Nav, clearly drunk at the wheel.

David was in his third year of art college, when the money kind of ran out, he was working 2 jobs and juggling paying rent and a million other expenses with a mountain of artwork to complete. His enthusiasm dimmed; creativity kept hitting a wall. 1 of his jobs was at a restaurant on the outskirts of Edinburgh, where he was holding down a commis chef’s job. Low pay, physically demanding, with a side-line in anti-social hours and an imploding social life.

The kitchen scratched an itch, it was creative and physical and organised.

And he was good at it.

He had arrived at a crossroad.

Inspired by Marco’s (Pierre White) White heat, a seminal British book showing the future of British Kitchens. Angry, dictatorial and stylised by the photos of Bob Carlos Clarke. David wanted to be part of something inspirational and haunted by self-doubt, a strong work ethic, and a massive need to express myself, he stepped away from Edinburgh art college and pursued a life in an apron.

Cooking would then dominate the next 30 years. Cooking his way through Michelin starred kitchens; Jamin with Joel Robuchon, le manior aux quarte saison, Marc Maneau, Chapter one under Andy MacCleish. The pursuit of excellence in these kitchens were a daily mantra, an enforced regime that punished every fibre of you to deliver. 17 Michelin stars and a final position as the Executive chef for Barnsley house - under the Calcot and Spa banner, brought his 31 years as a chef to a close.

Art never disappeared; it was a constant throughout the years. A handful of kitchen bibles were hand drawn, a thousand pictures drawn for friends and family.

A few out of the blue commissions.

It was time for David to step down from kitchens and the art was calling. He was commissioned to do a couple of things that planted the seeds of how truffle pig art looks today.
