When he died in 2018, Joël Robuchon had held 32 Michelin stars. His original restaurant was Jamin has the unbelievable honour of growing from 1 Michelin star to 3 michelin stars in just 3 years.
Famous for his formidable perfectionism, his kitchens demanded the exactitude that other kitchens merely dream about. Dishes like his pommes purée and lobster jelly are so intrinsic to his style of elevating ingredients that they are the most copied and homaged dishes years after there conception.
