When the French Laundry in Napa, California reopened under the guidance of Thomas Keller in 1994. A tidal surge of American talent swept across an industry.
The French Laundry was a life changing / industry changing endeavour.. dominated and led by the single minded passion of Thomas Keller.
The rigorous and microscopic standards he demanded produced the kind of food, that chefs instantly wanted to emulate.
Famously, when a young chef Grant Achatz ( 3 Michelin starred Alinea) went into the French Laundry kitchen to meet the chef, he walked passed a man dish washing to talk to a sous chef. Not knowing what Thomas Keller looked like, he asked the sous chef, if Thomas was available. The sous chef directed him back to the man dish washing. Thomas Keller was helping out the KP (kitchen porter).
The French laundry cook book showed a generation, the epitome of French Michelin kitchens done by an American.
